Japan by far. Not only they have good food, but you can get healthy fast food everywhere.

Italian food (pasta, gnocchi, pesto, pizza) and wine and figs - and an honourable mention for French bakeries (baguettes, croissants, pains-au-raisins…).  I think it’s my aversion to chilli and coriander, as well as my love of dairy products, that explains why I’ve spent so much less time in Asia than in any other continent.

Ethiopian if my hands-down favorite. The flavors are so amazing and I just love teff and eating with my hands. That said, I cook a lot of Asian (Vietnamese, Thai, Indian), Middle Eastern and Mexican dishes, largely because these lend themselves well to vegetarians/vegans. Although I live much of the time in France, and enjoy French cooking, it simply doesn't compare with the depth, variety and intensity of Asian cuisine. Kinda like a lover with only one move (salt and pepper) vs one which comes up continually with surprises. Each Asian culture has such a depth of dishes that it would take a lifetime to learn even one. Same with Mexico, actually. SOOOO much variety! I ferment and forage so this adds a lot of interesting and complex flavors to all cuisines (something which you'll also find extensively in Asian cuisine ... as well as traditional Eastern European cuisine). Yeah, kinda obvious ... I love food and cooking 🙂
